VANILLA BEAN CAKE DONUT
Persimmon Icing • Freeze-Dried Pomegranate Almond Crunch
It's winter and it's been a wet and odd one so far here in Coeur d'Alene. Anyways, we wanted to try something new in this bit of dreary weather we’ve been having. So we found some persimmons, broke them down, and made a really nice purée with just a touch of cinnamon and anise. Out of that we created an icing to dip our vanilla bean cake donut in. We broke down some pomegranates we picked up, and freeze-dried the seeded fruit, while we candied some almonds to make a “granola” to sprinkle on top of this donut.
